Most everyone has something they’re good at. For some it’s sports, or music, or video games, or dancing. For Jose, it’s cooking. He doesn’t just make the meanest breakfast burritos this side of the Rio Grande, with both red and green salsa straight from New Mexican Hatch chilis (it’s a thing, look it up. They’re delicious). No, Jose, who hails from Albuquerque (the same town as a certain chemistry teacher), is a Jack-of-all-culinary-trades. Mexican food is his favorite, because let’s face it, he’s a second-gen immigrant from Mexico City, and his mom was a great cook.
But Jose wanted something more out of the kitchen. So he went off to New York, Paris and Japan to learn all the he could from the best minds in the cooking world. Fifteen years after he set out, Jose returned to Albuquerque armed with mad cooking skills, (like the Bruce Wayne of the kitchen!) and several cookbooks-worth of ideas.From the rustic to the quaint, the savory to the sweet, Jose is deft at preparing virtually anything you could want.
So what’s a superstar chef like him to do? Of course he opened his own restaurant. Unlike most famous chefs, however, (looking at you Food Network personalities, except Alton Brown) he does his utmost to avoid lethal levels of celebrity. In fact, he’s intensely private. (But thankfully, not Howard Hughes-levels of crazy. That would just be sad, like popping a water balloon over a 5-year old’s birthday cake). Best of all, his “pay what you can” approach is a huge hit. It is a hit with the locals and the city’s disenfranchised. Business has never been better. No one can ask for more than that.
